I’ve a pie chilling in the fridge right now. I’m about 70% happy with it, but I realized I should write about my process. I make ONE pie per post. Most of what I post is my first go. I collect notes on how the pie went, what went wrong, what should be changed.

The cynical side of me thinks the perfect food bloggers bake/cook over and over again, working out the kinks. That just isn’t my style or the point of this blog.

Reader, you see the fails and imperfections. If a pie gets made again, it becomes refined, like the pie sitting in the fridge. The vanilla pudding layer needs to be thicker, more like pastry cream. The colored whipped cream sucks. And it needs booze.

So, dear reader, practice. Fail. Take notes. Your first go won’t always be presentable. But that ok. You’re going to share with friends and loved ones, right? Don’t feel like you need to give into the modern drive to present a perfectly cultivated and curated life.
