Sweet Potato & Chorizo Hand Pie
Do what you know, right? Instead of trying to do some version of a British savory pie, I went to the flavors I know—smoke, spice, caramelized. Instead of fancy, I went simple.
These little hand pies are 90g of hot water pastry dough were rolled out to a 6” circle, then filled with 1/2” dice of sweet potatoes and chorizo sausage. A smear of red onion jam was dragged over the filling before sealing the hot water pastry. Then they were egg washed and baked for 45-50 minutes at 375˚ till golden brown.
Red Onion Jam
Large red onion, halved and sliced thinly.
Sautee onions over medium heat till soft. Heat the vinegar and sugar till sugar is dissolved. Add to onion. Cook down till thick and rich, about 45-60 minutes.
